
- Gnocchi
- 4 Cups Vegetable Broth
- 1/2 Large White Onion
- 4 Garlic Cloves
- 1 Tablespoon Fresh Basil
- 3 Tablespoons Olive Oil
- 2 Tablespoons Salted Butter
- 3 Cups Unpeeled Cherry Tomato’s
- 1 Pack Pork Sausage
- 3 Teaspoons Cumin
- 1 Tablespoon Oregano
- 1 Tablespoon Dried Basil
- 2 Teaspoons Ground Coriander
- 1/2 Cup Chopped Spinach
- Pinch of red pepper flakes
- Kosher Salt to taste
- Pepper to taste
- Parmesan Cheese (Garnish)
- Add Olive oil and butter to large pot and heat till hot
- Add Chopped onion and sauté till caramelized
- Add minced garlic and cook for approximately 2-3 min.
- Add pork and cook all the way through
- Add spinach and cook till spinach is just barely done.
- Add 4 cups of vegetable broth and bring to a boil.
- In the mean time, using a food processor, process cherry tomatoes, 1 Tablespoon olive oil and fresh basil leaves together.
- Add tomato mix to boiling broth mixture and bring back to a boil. Add spices and simmer for 10-15 min. (additional spices can be added according to taste)
- Add salt and pepper to taste
- Add gnocchi and cook for additional 5 min. or according to package recommendations (taste gnocchi to ensure cooked, gnocchi usually floats to top when done)
- Serve and garnish with Parmesan cheese
