Pasta Bolognese

This is one of my personal favorites. The cherry tomato sauce adds just the right amount of sweetness. I like to add a pinch of red pepper flakes at the end to give it a little kick. I can promise this recipe is well worth the time. Enjoy!

Prep Time: 30 Min Cook Time: 2 Hours
  • 16oz Farfalle Pasta Noodles (Bow Tie Pasta)
  • 2 Small Yellow Onions (Diced)
  • 6 Cloves Garlic (Minced)
  • 1 Tablespoon Dry Oregano
  • 1 Tablespoon Dry Basil
  • 1 Cup White Wine
  • 1 Cup Half and Half
  • 16oz Italian Sausage
  • 20oz Cherry Tomato’s
  • 1/2 Stick of Butter
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Fresh Basil
  • 2 Teaspoons Ground Ginger
  • 2 Tablespoons Balsamic Vinegar
  • Salt and Pepper to Taste
  1. In a cast iron pot heat 1 Tablespoon olive oil and 1/4 stick of butter. Add onion and sauté until caramelized about 5-7 Min.
  2. Add Garlic and cook for additional 5 min stirring frequently.
  3. Add Italian sausage and cook all the way through.
  4. Add white wine and bring to a boil. Cook until almost all the wine has boiled off. Stir frequently.
  5. Add Half and Half. Return pot to a boil. Cook for approximately 5 min stirring frequently.
  6. Stir in oregano, dry basil, salt and pepper.
  7. In a food processor, blend cherry tomatoes with fresh basil and 1 tablespoon of olive oil.
  8. Add tomato mix to pot and bring it to a boil. Add ground ginger and balsamic vinegar. Reduce heat and allow it to simmer uncovered for 45-60min stirring occasionally. (The longer you let it simmer the better it taste)
  9. Towards the end of the simmering. In a separate pot boil water. Once water is boiling add a pinch of salt and a splash of olive oil. Add noodles and cooked as directed on package.
  10. After 60min has passed taste sauce. Add additional salt and pepper as needed. Additional seasoning can be added at this time as well based on taste and preference.
  11. Strain noodles and return them to original pot. Add 1/4 stick of butter and mix till all the butter is melted.
  12. Add noodles to completed tomato sauce.
  13. Garnish with Parmesan cheese and red pepper flakes. (Optional)
  14. NOTE: Pasta can be stored in fridge for up to 3-5 days or in the freezer for up to 3 months.
